Whole Wheat Sourdough Discard Waffles

Ingredients

For the overnight sponge:
300g unfed sourdough starter
250g buttermilk (or 250g milk + 1 tablespoon lemon juice or vinegar)
150g whole wheat flour
1 tablespoon brown sugar

For the batter:
1 egg
4 tablespoons melted butter
1 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt

Instructions

  1. In a 4 cup measuring cup, mix together all ingredients (starter, buttermilk, whole wheat flour) 
  2. Cover loosely and let sit overnight on your countertop.
  3. In the morning, add 1 egg to melted butter and stir well.
  4. Put all remaining ingredients, mix well and then pour right into the batter.
  5. Whisk the mixture until smooth while the waffle iron heats up.
  6. Spray or brush hot waffle iron with oil.
  7. Pour mix onto hot waffle iron.
  8. If there's no more steam from the waffle iron, your sourdough waffles are done.
